Legume Science Spotlight – What Motivates People to Eat Beans?

I’m always curious about what motivates or discourages people from eating certain foods. Of course, there are many factors at play – social, socioeconomic, health reasons, and the list goes on. Naturally, since my PhD is on pulses, I am particularly interested when papers investigate what motivates people to eat beans.

This paper by Doma and colleagues (2019) uses methods like questionnaires and focus groups to dive into some of the motivators and barriers behind bean consumption. Some reasons you might expect, but there are some fascinating tidbits, too! For example, the majority of folks in the study preferred to eat beans in the winter. I guess this makes sense if you are from a background where stews, chilis, and other similar dishes are your main source of beans.
