Great Northern Bean Guacamole

Last year (2023), my husband and I joined the Nebraska Dry Bean Commission for bean harvest. One of the types of beans we got to see harvested and brought into a processing facility – to be cleaned, stored, and bagged – was great northern beans. Nebraska is the number one producer of great northern beans in the United States, so I felt lucky to get to see harvest in action! Plus, they sent us home with some delicious, freshly harvested great northern beans. After thinking about what to make with this versatile white bean, I landed on Great Northern Bean Guacamole.

This is a flavorful, chunky, hearty and healthy bean guacamole. It makes a great appetizer served with tortilla chips (or bean chips!!) and/or vegetables. Or, you can even serve a larger portion and enjoy it as a main dish. Check out the recipe and recipe video for this bean guacamole below!

This is a flavorful, chunky, hearty and healthy bean guacamole. It makes a great appetizer served with tortilla chips (or bean chips!!) and/or vegetables, or you can even serve a larger portion and enjoy it as a main dish.

Ingredients

  • 1 and ½ cups cooked great northern beans

  • 3 – 4 medium avocados (depending on size and how much avocado you would like in the final guacamole)

  • ½ of a bell pepper (yellow, orange, or red)

  • Spicy pepper of choice, to taste (for example: poblano for a milder guacamole, or jalapeño for a spicier one)

  • ¼ – ½ cup minced red onion, to taste

  • 2 cloves garlic, or to taste

  • ½ cup chopped cilantro (optional)

  • ¾ cups corn (½ of a 15-oz. can, drained)

  • 2 Tbs lime juice, or to taste (the juice from 1 – 2 limes)

  • ¼ tsp salt, or to taste

  • ¼ tsp black pepper, or to taste

  • Serving suggestion: serve with tortilla chips (or bean chips!!) and/or vegetables to dip

Directions

  • This recipe uses cooked great northern beans. Cook up a big pot of great northern beans and save some to make this bean guacamole. If only cooking enough beans for the recipe, it takes about ½ to ¾ cups of dry great northern beans to get 1 and ½ cups of cooked great northern beans. You could also just one 15-oz. can of great northern beans.
  • Prepare ingredients: cube the avocado, dice the bell pepper and spicy pepper, finely dice the red onion, mince the garlic, and chop the cilantro. Drain corn if using canned. Squeeze the lime into a small bowl or dish.
  • To a large bowl, add all the ingredients: great northern beans, avocado, peppers, red onion, garlic, cilantro, corn, lime juice, salt, and pepper. Mix well.
  • Taste for seasoning and adjust if needed.
  • Serve your Great Northern Bean Guacamole with tortilla chips and/or vegetables. Bonus points for serving with bean chips. 😉

Notes

  • The time estimate of 15 minutes is if you already have cooked beans on hand.
  • Use fire-roasted corn for extra flavor.
  • Try bean chips instead of regular corn tortilla chips. The more beans, the merrier!
  • If you like smoother guacamole instead of chunky, you can mash the great northern beans, avocado, salt, pepper, and lime together until your desired texture is achieved before adding the rest of the ingredients.
