Beans are critical to agriculture and food systems worldwide, and that is certainly true in Colorado! To celebrate Colorado beans, my friend and fellow PhD student, Tymofiy Lutsiv, and I had a bean table at Colorado State University (CSU) Ag Day. I wrote about that more here, on the Colorado Dry Beans website (a non-profit in my state that promotes bean growers and processors).
